burning or combustion is a very complex process, there literally thousands upon thousand of chemical reactions when you burn something. when toast burns it releases these production into the air and this is what you smell
it is probably hard to find a single molecule responsible for the smell of toast

∙ 14y agoI've experienced this, I found out afterwards it was something to do with my gas fire. It wasn't installed correctly and there was a build up of soot in the flu.
