There are several different reasons why your potatoes look gray after boiling them. One reason is that there was damage to the potato that was not noticed earlier and with baking the spot came out.

I think is has to do with oxidation. Try putting your potatoes in water as soon as you cut them so they do sit in the air. They will not turn gray then.

The boiling in cooking is insufficient to break starch into sugar. If you used more heat and enzymes, in a process akin to making corn syrup, you would get a sweet product.

Can boiled potatoes left out at room temperature for three weeks develop harmful mold?

Boiled potatoes could develop harmful mold even in a refrigerator, in a period of 3 weeks. That is a very long time to store boiled potatoes (unless frozen, which is safer). Three weeks at room temperature is far too long for boiled potatoes (although raw potatoes can last that long).

Are boiled potatoes an unhealthy unbalanced meal?

It is not unhealthy to eat boiled potatoes, but it would be unhealthy to rely only on boiled potatoes for your nutrition, since they will provide you with no vitamin C, A, or D, and very little protein, so you really need a more varied diet. Anyone trying to survive on boiled potatoes alone would eventually succumb to scurvy.
