Not every dog drools, but many dogs do. When dogs salivate, the saliva can drool out the corners of their flues if they have loose or baggy flues: unlike humans, dogs cannot pucker or close their lips (flues) tightly. Salivation an be triggered by something that the dog wants to eat, or it may simply happen naturally throughout the day, depending on the breed.

Drooling when dogs smell food is an automatic response. Dogs salivate just like people. Not all dogs will drool, but all will salivate as an unconscious response to good smells.

the same reason a human does. our nose smells the food, which then sends messages to the brain that in turn sends messages to the mouth tha you are about to eat, making your mouth salivate.
