For several reasons, not the least of which is that it is made with egg yolks and might be topped with meringue - all possible sources of Salmonella. Another reason would be for ease of serving and appearance on the plate - a chilled pie would be firmer.

Pecan Pie should be refridgerated becasue of the oils in pecans if not kept cool they can go rancid
