I will try to make it as simple as possible, but first of all the dew is formed during the night. This happens because there is always some water in the air. When it is hot, more water can be solved in the air than when it is cold. So after a warm day, the air is full of water in gas form. Later on when the evening comes the air is cooled down, at this time the air is super-saturated with water and the water in the air starts to condense. It is this condensed water that we call dew.
