It is not entirely understood why ice cream headaches aka brain freeze occurs. It is thought to have something to do with blood vessels becoming sensitized to cold. Recent research identified these vessels and visualized them dilating in response to cold stimulus to the back of the soft palate. This is thought to play a part in the pain response that results.
