The taste & color of honey is determined by which variety of plant the bees get nectar from. A hive of honeybees tends to get nectar from the same variety of plant till it is exausted. This is why a producer can claim their honey is a certain type. So in answer to your question, some honey is bitter because the bees collect nectar from a specific type of plant that causes that particular kind of honey to be bitter.

Lemons have 3 parts.

- the Juice which is very sour (it contain a lot of citric acid (53.3 mg /ml juice) and a little malic acid). Lemon juice has a pH of 2,3

- the peel which contain two parts :

-zest : Lemon zest has an intense lemon/citrus flavor with very little bitterness

-pith (white part) : very bitterness.

The bitterness is due to the presence of primarily one compound : glucoside hesperidins. There is a lot of this coumpound in the pith.
