As onions are sliced or eaten,cells are broken, allowing enzymes called alliinases to break down amino acid sulphoxides and generate sulphenic acids. Sulphenic acids are unstable and spontaneously rearrange into a volatile gascalled syn-propanethial-S-oxide. The gas diffuses through the air and eventually reaches the eye, where it binds to sensory neurons, creating a stinging sensation. Tear glands produce tears to dilute and flush out the irritant.

The chemical is a sulphenic acid which will change into a gas that spreads out in the air. the gas from the onion will go to the nearest water source, which would be your eyes. To stop yourself from crying you can..................

Onions,like other plants have cells.the cells are divided into two sections separated by a cell membrane.One side of the membrane contains an enzyme which helps chemical processes occur in your body.The other side of the membrane contains molecules that contain sulphur:when u cut an onion,the contents on each side of onion mix and cause a chemical reaction.the reaction produces molecules such as ehtyulsufine which makes you cry.

Onions, garlic, scallions, and shallots all contain high amounts of sulfur. When, for example, an onion is cut, onion juice droplets spray everywhere and some end up in your eyes. When this happens, a chemical reaction takes place. All of the sulfur reacts with the water in our eyes to form sulfuric acid - one of the most potent acids known to man.

Our body can't destroy the acid, so instead it tries to dilute it so it won't be as potent. As a result the body pumps more and more liquid into our eyes, hence the crying. Eventually it dilutes the sulfuric acid to a level where it isn't dangerous anymore. But if you keep cutting onions more and more sulfur will enter your eyes and more and more tears will be formed as the body tries to nullify the threat.
