It is the same reason a person's blood turns black when it is on the outside of the body. When blood cells are exposed to the air, they become deoxygenated, dry up and turn dark.
After blood releases oxygen to the cells of the body the blood becomes deoxygenized. It then travels back to the heart to get more oxygen.

The blood becomes deoxygenated. So I guess blood becomes deoxygenated in the capillaries of the body as it circulates.
