Water evaporate because the sun heats it up and it turns into water vapor .

There are three classical states of matter; solid, liquid, and gas. All matter can go through these states. When matter is a solid that means the matter has a fixed shape and volume. A liquid state is when matter has no fixed shape but a definite volume. A gas state is achieved when matter has no volume or shape. Typically matter becomes a solid when it reaches it's freezing point. Matter becomes a liquid at the melting point. A gas forms when a substance reaches it's boiling point. Vapor is when a substance is in it's gas form while being under it's critical temperature; vapors unlike gases can return to a liquid or solid state without changing it's temperature. Now every chemical has different points for it's states of matter. Water turns to solid below 32 F (0 C), a liquid between 32-212 F (0-100 C), and becomes a gas at 212 F (100 C) and above.

To answer your question, water can evaporate because like all substances, water slowly vaporizes or "reverse condensates" (liquid -> gas).

At the interface between water and air, there are a few molecules of liquid that move into the gas phase, and vice versa. At a given temperature, in a closed vessel, these two movements (evaporation and condensation) are at an equilibrium: the amount of water evaporating is equal to the amount of water condensing.

The rate of evaporation is determined by temperature: the higher the temperature, the faster molecules will enter into the gas phase.

the rate of condensation is determined by pressure; the higher the pressure, the higher the rate of condensation.

When the system is open (no pressure but atmospheric), the evaporation will not have a corresponding pressure increase as effect: therefore the rate of evaporation is larger than the rate of condensation, and eventually all the water will enter the gas phase

When we heat liquids, the atoms/molecules of the liquid gain thermal (heat) energy. They move more rapidly, and this increase in their kinetic energy eventually overcomes the intermolecular forces that hold the substance in its liquid state. The atoms/molecules just "break free" and change state to become a gas.
