Zinc is more reactive than Hydrogen, and so it will replace it and bond with the Cl atoms. This is a standard single displacement reaction:

Zn + 2HCl --> ZnCl2 + H2

Copper is less reactive than Hydrogen, so it will not form a compound with the Cl atoms. The reactivities of various elements can be found on any RedOx table. A metal with a low value has a strong potential to be oxidized (i.e. give up electrons and form a compound with a negative ion)

Copper is less reactive than hydrogen (look at the reactivity series), so will not take the place of hydrogen in an acid to form a salt and hydrogen.

Metals which are more reactive than hydrogen will take the place of hydrogen to form a salt + hydrogen gas.

For example: Magnesium + hydrochloric acid --> magnesium chloride + hydrogen

Sorry, copper does not react with hydrochloric acid as it is not reactive enough to do so. Only metals above hydrogen in the reactivity series will react with dilute acids.

Copper does not react with dilute HCl, but dissolves in hot concentrated HCl, and dissolves quickly if oxygen is bubbled through.
