symbol for current is I, which originates from the French phrase intensité de courant, or in English current intensity. So early scientists were used to refer electric current as the intensity of the electricity in a wire.

The "I" is thought to have been meant to represent "Intensity" (of electron flow)."

"I" stands for "Impetus", the original name for the strength of an electrical current; that is, before Andre-Marie Ampere's Law of 1825.
'I' comes from the French word for current "intensité".

According to my professor at Missouri S&T, Dr. Bijaya Shrestha, current is represented by the letter I in electronics because in the past, scientists used the phrase "Intensity of current" or just "Intensity" to describe current.

Similarly, Q is used to represent electric charge because scientists in the past described it using the phrase "Quantity of charge."

In French the concept of current is called Intensite if you study physics in French you'd call it Intensite (Which can be understood as How intense the current is). Therefore measuring current is just measuring how Intense the current is. I hope I answered the question
