Metal is most commonly used for the blades of knives due to it's strength, edge retention, and how manipulatable it is. Companies can blend all sorts of metals together and temper it differently to achieve exactly the cutting performance that's intended for the knife. There are other materials out there for blades, but as of right now, nothing is more versatile, recyclable, maintainable, etc, than metal.
