Tite Kubo, the creator of bleach, gave three reasons to calling it that.

One, as the soul reapers cleanse souls, it's like they are "bleaching" their souls. Like how bleaching in a clothes sense means to remove stains and blemishes, the shinigami remove sin and corruption from the souls.

Two, he wanted to name the anime black, but then decided it should be Bleach which suggests the color white, in that case would make one think about the color black.

From the first chapter Ichigo says he stands out because of his blond hair and upperclassmen got ticked off of that. Ichigo has natural blond hair, but in the past in Japan bleach was used to achieve blonde hair (which the upperclassmen accused him of doing).

Well through my opinion bleach got its title 1) because pretty much all the characters look like they bleached their hair. 2) because something about their black kimono, its like bleached... i don't know, all i know something about their kimono... its bleached.
