The significance of Stone Age technology is the technology we have is based on it. If you don't believe then take the wheel for example, if the cave men hadn't discovered the wheel then it would have been discovered later postponing the invention of cars and trains and buses. Also the weapons that they had made us evolve making guns and keeping some stuff the made like the spear. There are so many things that they have fond out that we use today
