If the turkey broth is sour then it's usually bad, or the inards such as the giblets, liver, etc., were left in the turkey. The liver will often give the turkey a sour or bile taste. Some people forget to check out the neck of the turkey and pull out the spare parts. LOL Sometimes, depending on where you purchase the turkey they don't bother putting the giblets, liver, etc., inside the neck, but always check.

HOW TO PREPARE A TURKEY OR CHICKEN:

I found out it's a good idea to soak your turkey/chicken (even chicken pieces) in cold water and salt. Leave for approx. 10 - 15 minutes and then rinse well and pat dry with paper towel. Not only does the salt help get rid of any bacteria, but it also tenderizes the meat.

I wouldn't use the turkey broth because it sounds like it's bad and I go by rule of thumb "if in doubt, throw it out!"
