Hunting season is in the fall so that the newborns from the last spring have grown enough to fend for themselves. The adult females are not carrying young and the males are in rut, making them fair game.

because that is when deer are mating, and have a full set of antlers, after hunting season deer start to lose antlers

So you do not have bird hunters walking around when you have deer hunters in the woods. Bird hunting is not a quiet sport and deer hunting has to be.
