In New Zealand - the maori use to dig a big pit and put rocks in the base, these would heated up and then meat and veges were put in big mesh baskets wrapped in mutton cloth and then put in the ground - this was then covered with dirt till the hole was filled in. This is called a Hangi - Many people still today cook food this way for celebrations - a well cooked Hangi is absolutely beautiful.
