The rabbit is a well known symbol of fecundity, the ability to produce abundant offspring. Easter, especially in some of its pre-Christian origins, has a lot to do with life, fruitfulness and fecundity. It is a natural but for some less than obvious fit. The same ideas pertain to the concept of Easter egg.

Easter commemorates the resurrection of Christ. The bunny is a symbol of Spring that also represents new life and so is associated with the Easter holiday.

Rabbits and eggs are a sign of fertility. Easter dates long before Jesus. It used to be (& still is) a celebration of the fertility of the Earth, which is renewed each spring.
