Because Adrian Paul originally was cast to play Connor MacLeod- but he talked the producers into letting him play his own character. So Christopher Lambert was asked to appear in the first episode to help avoid confusion when fans saw the new Highlander would be an immortal named Duncan MacLeod.

Adrian Paul had originally been cast to play Connor MacLeod- but he said he would rather play his own character and not one already played by someone else. Christopher Lambert did appear in the pilot of the series as his character from the movies to help fans see that Connor and Duncan are two different people. It is rather odd that the TV series does it as if Connor is not the last immortal and has not won the prize when all fans saw that was how the first movie ended. All sequels to the first movie are despised by the fans and some even think the TV show ruined the franchise being set in the same universe.
