Motte and Bailey castles were built out of wood because it was cheap to buy, light to carry and could be built really quickly and with ease. A motte and bailey castle would have been built in a matter of weeks. Also it meant the motte would not collapse
because they didn't have any other strong materials. also sand castles were for the beach.
To start with there were mote and bailey castles made out of wood because they didn't use stone then and wood was strong against arrows spears and other weapons. also wood castles did not take long to build and didn't use many resources. at the most a wood castle would take about a year. after 1100 stone castles were used because rebels and invaders started to burn the wood. they changed to stone as it was stronger in every aspect even if it took a lot longer to make.

The earliest castles were Norman Motte and Bailey castles during the Medieval period of 1066 to 1153. Motte and Bailey were built on top on hilltops and a high and extremely steep mound was built which had very steep sides and a Tower was built on top of it. The process of excavating the earth to build the massive mound, which was the motte, created a highly convenient defensive ditch at the base of the motte and surrounding the whole of the bailey. The ditch became known as the Moat. These castles were made of wood. From 1154-1485 the castles builders were the Plantagenet English Kings. These great old castles were built for Medieval warfare and defence and new parts of the castle were designed for this. These were made of stone instead of wood because wood caught fire in battle.

This depends on what type of castle your referring to. In the Norman times, there were two different types of castles built. There were Motte and Bailey castles and Stone keep castles (Stone castles). The Motte and Bailey castles were made out of wood and the Stone keep castles were made out of stone (obviously).
