Lettuce in the garden can wilt because of insufficient watering or due to root damage.
In the Refrigerator or in the Salad
Lettuce cells hold water, which makes it crisp. Picked lettuce will slowly wilt after picking as water leaves the plant cells.
Also most salad dressings contain salt or salt-based spices that change the
osmotic balance between the inside and outside of the lettuce cells. If the
dressing sits on the lettuce for too long before eating, the water will be drawn out.
Osmosis. The celery stalk will try to equalize internal salt content with the salt water. It will do this first by transporting fresh water from inside itself to the salt water.

Most likely the solution is water and salt. The salt in the water causes the celery to pull water out of itself to try and even out the salt to water concentration. This causes the celery to wilt.
Because of something called capillary action. Capillary action is the tendency of water to move upward in a capillary or thin tube, it's the same reason as to why when placed in a solution of water and red dye, the celery will turn red as well. The action causes the celery to absorb the salt water into it thouroghly and thus, it wilts.
Cucumbers diteriorate in saltwater because the molecular content in the cucumber has very little to no sodium cloride {salt} in it. Therefore the cucumber has no imunity to saltwater and breaks downeasily.

just uproot the stalk. make sure not to damage the roots while pulling them out. dig a hole in your location of choice and replant the stalk, pat the ground to secure the plant in place. don't leave the stalk out of the ground for to long or it will wilt and die. after the plant is relocated make sure to water it generously. and your done!
