Turgidity
Water is necessary for the turgidity i.e. the pressure of water in the cells of plants which is important for the survival of plant else it will wilt. It is also required for the growth as it expands the plant cells
Water is the only choice for plants. Nutrients desolve in it and get drawn up (via hydrogen bonding) to the tops and leves of the plants. It's okay to feed a plant something like soda water for a brief period, but since the roots of the plants require oxygen for the plant to live (it's the leaves that need carbon-dioxide) you could do damage by pushing out the oxygen in the soil.
