The potato might not spoil in the traditional sense (mold, slime, funky odor), but it could be dangerous. Actually potatoes that are left out overnight are perfectly fine to eat. as long as they do not have much milk or butter on them. even if they have butter they will be fine to eat. plain cooked potatoes, such as baked can stay out for up to 3 days.

We think that because food was out overnight that we are going to get sick from it. this is a common misconception with our society.

I leave food out all the time and its fine. like eggs, eggs can stay unrefrigerated for more than a week and there is nothing wrong with them.

Processed vegetables should be treated as any other potentially hazardous food and should not be left unrefrigerated for more than 2 hours. Less time is better.

Most any food will eventually spoil. Raw whole potatoes generally keep best in a cool, dark, well-ventilated spot. Leftover cooked potatoes should be refrigerated.
