I have been dealing with saline (salt) systems since the early 1970s and have never known of a case where animals have been adversly effected by the saline water. Dogs and cats continue to drink from pools after the pools have been converted to saline, as though there was no difference.
Even with normal splash out this should not be a factor however I wonder why you would the decision was made to plant flowers and shrubs etc around your pool. The resulting "debris" from the flowers (pedals etc.), pollen and other things that are associated with vegetation are a source of contaminants that can possible clog your skimmer and pump baskets, change the chemistry in your pool, plug the filter and require increased amounts of chemicals to offset. Not to mention that added manpower to keep removing this "debris" and added circulation time to keep the contaminating situation in check.
