well when the frosting starts to disapper it means that you are iceing the cake to soon the cake needs to cool for about 20min before iceing if you don't let it cool the frosting melts so i don't think it is the frosting that's the problem :)
Spread a thin layer of frosting onto the foil where you want coconut around the cake. Then sprinkle the coconut onto that layer of frosting. The coconut will hide the frosting as well as sticking to it.
