A capon chicken is a cockeral that has had it's reproductive organs removed at a young age, generally from 6 to 20 weeks, for various reasons. In order to create a capon, castration within the aloted time period is necessary. This practice is illegal in the United Kingdom.
Caponized roosters no longer expend energy to mate with the hens. They become less active, eat more and the meat of the neutered cockerel remains tender unlike the active rooster who develops tough muscle tissue.
