These are called blood spots. Blood spots are the result of broken capillaries in the reproductive system. When a capillary ruptures, a drop of blood leaks out and becomes part of the egg. The presence of a blood spot does not mean the egg is fertile or that an embryo is beginning to form. Egg processors try to identify and remove all eggs containing blood spots before eggs go into the carton. Occasionally one is missed, but if the blood spot is small, it can be removed and the egg used. They are harmless and do not mean the egg is inedible. Small ones disappear when you are cooking the egg. Some people pick them out with a spoon before cooking.
Blue and white are the colors of the inner egg shell. Many eggs do not have any additional color. However, there are brown eggs. That color is put on after the much of the shell is in place and the egg is coming down the oviduct. The spots are areas of uneven deposition. You'll notice that no two spotted eggs from the same chicken look the same. In some poultry, such as the quail, the spots have another function. They camouflage the egg so that it is harder to spot in the natural grass nests.
Their eggs can be from a teal with brown spots to a light blue with spots.
There shouldn't be white IN the yolk of an egg. The white should surround the yolk within the egg shell. The yolk (yellow bit) is what transforms to become a chick in a fertile egg. The white (albumen) is what the developing embryo feeds on.
