In the hibernation state, the computer is essentially turned-off. When it starts up again, it remembers all that it had running previously and loads them up for you. You could unplug it or change batteries and it wouldn't have to do a full restart.

In the standby state, the computer shuts off everything except the processor and memory (and sometimes the network interface). This is a power saving mode and the computer takes very little time to go from the standby state to the 'fully-on' state.

In hibernation, the computer actually turns off, but stores any open programs in it's memory. Hibernation therefore requires free disk space, but over longer periods of time, it saves more power than standby mode. Standby is basically where all of the hardware turns off (screen etc.) but the computer is still running.
