.70 ounces Actually, it is 2 ounces. I am suspicious of the 2-ounce figure. The entire weight of the hamburger, cooked and including the bun, according to White Castle, is 58 grams, or about 2 ounces (see the serving size column in the nutritional info page at http://www.whitecastle.com/_pages/nutrition.asp). Perhaps the weight of the bun, pickles, etc. exactly counterbalances the weight lost by the patty in cooking, but I doubt it.
According to wikipedia, in white castle's former process (before there were holes in the patties) there were 18 patties per pound of beef, so the pre-cooked weight of one patty would have been 16/18 or 0.89 ounces. (it also says forty to a kilogram, which is 25 grams or .88 ounces). There's no way it's 2 ounces anyway - 2 ounces is the PCW of a standard-sized patty at most other fast food restaurants. A quarter of a pound is 4 ounces, and we all know what a QP patty (Whopper or McRoyal) looks like.
A typical hamburger will be made out of 1/4 - 1/3 pounds of ground beef.
Historically, hamburger patties range from 1.5 ounces of beef (before cooking) to 8 ounces (1/2 lb.) of beef. And some weigh up to 3 or 4 pounds.
In the 1950's the average commercially sold hamburger (sandwich) sold weighed approximately 3 ounces (burger, bun, condiments, and pickle). In the 1960s several chains standardized their burgers using a 3 to 4 ounce patty with the largest being about 6 ounces, making the Sandwiches 4 to 8 ounces total.
One national chain restaurant located in Texas offered a 1/2 pound burger patty, the largest sandwich they offered used 3 patties making the whole weigh about 2 lbs. (they may still offer it.)
Most present day national hamburger chains offer sandwiches ranging in size from 1/4 pound (3 ounce patty) to 1 1/2 lb. (3 six ounce patties).
McDonald's like every other fast food restaurant goes by the weight of the patty before it is cooked. So say if you want a Quarter pounder then that would be the weight of the patty before it was cooked, 1/4th of a pound. Double Quarter pounder would be 1/2 a pound before cooking and a regular hamburger would be 1/8th of a pound.

Yes! about 40 years ago there was White Castle Hamburger in San Diego. It was on College Ave. just off the campus of San Diego State College which is now San Diego State University. My family never ate there; we were McDonalds and Jack in the Box fans. However, I left home and went to Rutgers where White Castle 'rat burgers' were the rage. When I went back to San Diego, many years later, the White Castle was gone.

White Castle burgers continue to soar in national popularity. While there are not as many White Castle locations as years past, the franchise has attained millions of loyal fans and customers. Over the years, their burgers have also changed in price. In fact, one slider was just 25 cents back in the 70's and 80's. Today, a hamburger or cheeseburger will cost you 69 to 86 cents.
A hamburger can be as long as someone chooses to make it. However, the width of a circular hamburger is its diameter, and is typically 3 to 4 inches, with variations in thickness. There isn't a specific guideline for how to shape your hamburgers. They can be tiny as those little sliders that White Castle sells, or they can be huge and contain several pounds of meat.
